Nectar’s Must-Bake Fall Recipe: Vanilla Autumn Spice Cookies

COOKIE INGREDIENTS
1 ½ cups Sugar
½ cups Butter or Vegan Butter
½ cups Vegetable Shortening
2 tsp Vanilla
2 Eggs or Egg Substitutes*
2 3/4 cups All purpose flour
2 tsp Cream of Tartar
1 tsp Baking Soda
¼ tsp Salt
1 tsp Cinnamon
3/4 tsp Nutmeg
½ tsp Ginger
½ tsp Allspice
CINNAMON GLAZE
½ tsp Cinnamon
2 cups Powdered sugar
2 tbsp Water
1. Preheat oven to 350 F.
2. Using a mixer, cream the sugar, softened butter, vegetable shortening, vanilla, and eggs on medium high.
3. Add the flour, cream of tartar, baking soda, salt, and spices. Mix for 30 seconds until well combined.
4. Line a baking sheet with parchment paper. Using an ice cream scoop, scoop mixture into the baking sheet, spacing cookies about 2” apart. Bake in the oven for 9 minutes.
5. Remove cookies from the oven and press down slightly. Cool cookies on baking sheet.
6. For the glaze, whisk all ingredients together, adding a 1/2 tsp of water at a time as needed to get a drizzling consistency.
7. Once cool, drizzle each cookie with Cinnamon Glaze and treat yourself!
*Vegan Egg Substitute:
Flax Egg
Mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken. Makes one egg substitute.
